Kim's Knot Rolls

 


Here is my family's favorite roll recipe for Thanksgiving and Christmas:

3 c milk
3/4 c butter/margarine
1 c instant potato flakes
3/4 c sugar
1 T salt
1 heaping T yeast
4 eggs
7 cups flour

Step 1 - Heat milk in a large glass bowl in microwave about 7 minutes. Add 1 stick of butter, potato flakes, sugar and salt. Let sit for 5 minutes. Put 1/2 cube butter out so it will get soft.

Step 2 - Beat 4 eggs. Add the milk mixture to the eggs, make sure it is not too hot or it will cook the eggs. Add the yeast. Mix and slowly add 7 cups of flour.

Step 3 - Let rise for 1 1/2 hours. Divide dough in half and roll 1 half into a large rectangle. Spread butter on the top. Take one side and fold half to the center. Then take the other side and fold it over, so you have 3 layers of dough. With a pizza cutter cut into strips. Tie in a knot tucking the ends underneath. Let rise on a cookie sheet for 3 hours, then bake at 350 for about 8 minutes.

For cinnamon rolls mix
3/4 c sugar
3/4 c brown sugar
1 heaping teaspoon cinnamon. 

Follow instructions for step 3 sprinkling cinnamon on the buttered rectangle... then continue

(Not part of the original...But I like this one better)
Cinnamon Roll Frosting:
6 oz cream cheese
3 c powdered sugar
1/4 t salt
1 t vanilla
2/3 c butter
1/4-1/2 t cinnamon

For orange rolls mix 3/4 - 1 c sugar and rings of 1-2 oranges. Follow the same as for cinnamon rolls.

Frosting:
4 c powdered sugar
2 T butter
1 t vanilla
enough milk/cream to make a creamy frosting
Spread on the rolls after they come out of the oven. Give them to your friends and they will love you forever. (No joke... it says that on my recipe).

What I do... Lots easier.

Place in bread maker:

1 1/2 c milk (warmed)
6 T melted butter
2 eggs
1/2 c potato flakes
3 1/2 c flour
6 T Sugar
1/2 T salt
1/2 T yeast

Set for dough cycle (or use the timer for later)

Take it out of the bread maker and follow the shaping instructions and the rest for 1/2 the amount of dough and half the frosting... etc.
